Our cuisine, and Ligurian cuisine in general, is green, perfumed, made of poor ingredients,
yet refined in the assembling, with a great final result in the amalgam of aromas and flavours.

Our territory is the absolute protagonist in supplying the raw materials, characterizing a light, mostly
vegetarian cuisine, with different, original, unexpected flavours, bound by the yellow gold of our land:
the extra virgin olive oil. Ligurians have got a past and a present as gourmets and their traditional dishes amply demonstrate this.
We would like to re-propose them to you using home grown vegetables and greens which will stuff salty pies and ‘cima’
(a local specialty), or will enrich ravioli, or will fill other vegetables or will go into soups or minestrone
accompanied by garlic, parsley, sweet marjoram, thyme, rosemary, oregano, mint and finally basil, the main ingredient
in pesto, symbol of Liguria all over the world.
On our table, of course, meat and fish dishes will not be missing, yet cooked in an innovative fashion, but always
related to Ligurian flavours. And there will be plenty of pizzas, ‘focaccia’ (a local dry pizza), home made bread as well
as many sweet surprises.
